We are pleased to introduce Cave de Saumur as a new exclusive to BIN 905. The town of Saumur is a storied town boasting a fairytale castle. For a thousand years, peasants have dug into the hillsides to create houses from the chalky soil. The same soil which also allows vignerons the luxury of extensive cellars is directly responsible for the quality of the local wines. This 100% Chenin Blanc is made from a favored vineyard of 40 year old vines, which provides low yields and concentrated acidity. The result is a dry white wine with stunning, racy acidity with refreshing apple, lemon peel, floral and fruity notes. This wine pairs beautifully with white fish, mussels, or a crisp salad.
